Gong Bao Chicken

Real Food for Real Kids - Gong Bao Chicken Recipe

Makes 12-15 servings

Marinade Ingredients:

  • 2.5 lbs chicken thigh, 1” dice
  • 2½ tbsp low sodium soy sauce
  • 2 tsp organic corn starch
  • 1 tbsp sunflower oil
  • ¼ tsp sea salt

Sauce Ingredients:

  • 2 tbsp balsamic vinegar
  • 3 tbsp low sodium soy sauce
  • 2 tbsp maple syrup
  • ½ tsp sweet paprika
  • 1 tbsp organic cornstarch
  • ¼ tsp sea salt
  • 1/3 cup water

Pan Ingredients:

  •   2 tbsp garlic, minced
  • 1 tbsp ginger, minced
  • 1 tbsp scallions, thinly sliced
  • 1 red bell pepper, 1” dice
  • 2 tbsp sunflower oil


  1. Marinate the diced chicken with the marinade ingredients for 1 hour or overnight
  2. Poach the marinated chicken (cook in pot of simmering water) until partially cooked and set aside
  3. Combine the sauce ingredients in a separate bowl until the sea salt and cornstarch are dissolved
  4. Heat 2 tbsp of oil in a pan and sauté the garlic, ginger, and scallions until soft and translucent (don’t let it burn!). Add bell peppers into the pan and cook for about 1 minute
  5. Add the chicken to the pan and sauté for a couple minutes
  6. Pour your sauce into the pan and bring to a simmer until sauce thickens
  7. Serve over a bed of steamed rice and enjoy! Marinade

Real Food Tips:

  1. Add some chili peppers to give the dish some heat!
  2. Add roasted nuts or seeds to the pan before you toss in the chicken.
