Madagascar Chicken

Real Food for Real Kids - Madagascar Chicken Recipe

Makes 4 servings

Ingredients:

  • 4 large chicken thighs
  • 4 chicken drumsticks
  • 1 clove minced garlic
  • 1 tsp ground ginger
  • ½ tsp thyme
  • 3 tsp cumin
  • ¼ tsp ground cardamon
  • 2 tsp coriander
  • ¼ cup cider vinegar
  • 1 tbsp agave syrup
  • ¼ tsp allspice
  • ¼ tsp nutmeg
  • ¼ tsp cinnamon
  • 1 tsp dry parsley
  • 4 tsp curry powder
  • pinch cayenne
  • pinch mint
  • pinch salt
  • pinch pepper

Preparation:

  1. Mix all of the ingredients except the chicken in a small bowl. Voilà – you have a marinade!
  2. Chop the thighs into pieces and massage the marinade into your chicken.
  3. Place the chicken and marinade in the fridge.  Leave the chicken in the fridge for four hours or overnight, turning occasionally.
  4. When your chicken is sufficiently marinated (the longer the better), remove it from the bag, arrange it in a single layer in the cookware of your choice. Place it in an oven preheated to 375ºF and cook until the internal temperature reads 165ºF on a meat thermometer (usually about 25 minutes).
  5. Serve and enjoy.
